Egg Foo Young

Antonia's Choice: Egg Foo Young



Today we picked a recipe from one of the Cookbook's that Antonia grew up on. She grew up in Nebraska which is always fun for me because I get to eat things I never had before! I had my first Fondue with her and now I had Egg Foo Young for the first time. I hate to admit this but I will - I thought it was a Chinese Dish but not so much. It is a very simple very hearty pancake patty with eggs, veggies, and ground meat in it. You can have it as plain pancakes with a yummy sauce or with Antonia's suggestion, Put them in sandwiches - yum. Did I mention these are super easy to make??

Here is how you make them:

First, the ingredients:

  •  Ground Beef (or any ground meat you choose)
  • celery (2 stalks chopped)
  • 6 eggs
  • 1 onion 
  • sprouts 
Brown the meat.
Chop the celery and onion.
In a medium bowl, add 6 eggs and beat them. Then, add the chopped celery, onions, and sprouts.
Heat up a pancake skillet to medium high. Pour a little oil on skillet. Scoop up the liquid in a little 1/2 cup "scooper".  Use a spatula to scrape eggs that run back to edges. And cook a few minutes on each side.
Flip.
 
Here are the ingredients for the sauce:
Add a little chicken broth, vinegar, soy sauce, sugar, and cornstarch in saucepan over heat until it clears.
